This is by far the best oatmeal concoction I have come up with to date. I’m not a huge fan of sweetness, so feel free to add sweeteners to taste 🙂

Nutty Porridge 

Ingredients:

  • ¾ cup water
  • ¼ cup steel cut oats
  • 2 T. ground flax seed meal
  • Dash of vanilla extract
  • 2 T. walnut pieces
  • 2 t. honey
    • Optional toppings:
      • slivered almonds
      • dry cereal
      • granola
      • chocolate chips
      • sliced bananas
      • apple chunks
    • Optional mix-ins:
      • peanut butter
      • craisins
      • brown sugar
      • cinnamon
      • nutmeg

Instructions:

  1. Bring water to a rolling boil
  2. Reduce heat to medium-low and add oatmeal
  3. Let simmer for 25-30 minutes until most of the water is absorbed. Remove from heat.
  4. Add flax seed meal, vanilla, and walnuts. Stir. Let sit for 5 minutes.
  5. Spoon porridge into bowl and top with a drizzle of honey and sprinkle of the topping(s) of your choice. (I usually use Total or Grape Nuts cereal as my crunchy topping!)
  6. Enjoy 🙂
